FRUITCAKE COOKIES

This is my recipe, developed by me. It is the most awesome cookie you will ever eat, it is a most delightfully flavored cookie.

3/4 lb. Butter (room temperature)
2 c. sugar
6 Eggs
1 oz. Lemon Extract
4 c. flour
2 tsp. Baking Powder
1 tsp. Salt
1 lb. Dates (chopped fine)
1 lb. Candied Cherries (chopped fine)
1 lb. Candied Pineapple (chopped fine)
1 lb. Pecans (chopped fine)

Cream butter and sugar, add eggs one at a time, beating well after each addition. Mix flour, baking powder, and salt together. Reserve 1 1/2 cups flour mixture to dredge the chopped fruit and pecans. Beat remainder of flour mixture in to egg mixture until all is incorporated.

Dredge the fruits and pecans until well coated with flour mixture. Add this mixture to the egg-flour mixture and mix by with a large spoon.

Bake at 325° for 20 minutes. Makes approximately 100 cookies.

Note: I put a pan of water on the bottom shelf of the oven to provide a moist heat for the cookies. This will keep them moist while they bake.
