Carrot Salad

This is my husbands' favorite salad. I have learned to make to fit into his diabetic diet and not lose any of the flavor. You can make it and not use the substitutions and it will be a little richer.

1 lb. Carrots (grated)
1 lg. Apple (coarsely chopped)
1/2 c. White Raisons (use 1 c. if not diabetic)
6 pkts. Equal (or 4 T. Sugar)
Pinch of Salt
1/2 to 3/4 c. Fat Free Mayonnaise OR Salad Dressing

Mix all ingredients together and serve.

Note: The amount of mayonnaise or salad dressing you use depends on the consistency you like your salad to be. We like it until it just sticks together, not soupy.
