I just came across this recipe written on a paper plate, stuffed in an old cookbook. If I've made it once, I've made it 200 times. It is easy, quick and has wonderful flavors. I like to use a smoked turkey sausage that I have specially made. It is practically fatless and lightly smoked and you don't have to precook it to get the fat out before you put it in the pot. Any other sausage you use you will have to nuke it or pan fry to drain out the fat.
2 lb. Smoked Sausage (cut in 1" pieces)
2 c. Long Grain Rice (uncooked)
1 c. Onion (chopped)
1/2 c. Celery (chopped)
1/4 c. Bell Pepper (chopped)
1/4 c. Green Onion Tails (chopped)
1/2 stick Margarine
1 can French Onion Soup
1 can Beef Consommé
Nuke the sausage in a microwave safe bowl for 15 minutes or so, long enough to draw out the fat. DRAIN the fat off and put in electric Rice Cooker.
Add the rest of the ingredients and set the controls for the rice cooker.
After it has been cooking for about half an hour, take off the lid and stir, then replace the lid.
When it dings, let it sit for at least 30 minutes before serving. |
