CRAWFISH CORNBREAD
This is one of those wonderful recipes that you get at a gathering where everyone has brought a dish, and no two are alike. We exchange recipes and everyone goes home to try the new recipe on their family.
2 lbs. Crawfish
1 Bell Pepper (chopped)
1 Onion (chopped)
1 stick BUTTER
2 boxes Jiffy Cornbread Mix
2 Eggs (slightly beaten)
2 cans Diced Rotel
1 can Whole Kernel Corn (drained)
Saute bell pepper and onion in butter until wilted. Add crawfish and sauté for five minutes more. Mix in the cornbread mix, eggs, Rotel and drained corn. Mix all ingredients until all is incorporated.
Bake in a 9" x 13" greased pan. Bake at 350° for 45 minutes. Serve hot. |
